Lactic acid bacteria would inevitably encountered varieties of adverse conditions during the process of industrial production or entering the human gastrointestinal system, which caused some Lactic acid bacteria entered into the Viable but non-culturable (VBNC) state. However, the study on the mechanism of the formation of the VBNC state was not clear. In our study, Lb. casei Zhang was selected to observe, which had excellent probiotic characteristics. The strain was cultivated in different stress conditions (e.g. low temperature and low pH value), and the induction and detection of VBNC cells were examined.
