Dahi, an artisanal fermented milk product native to Asian countries is well known for its sensorial, healthy, and therapeutic properties. These properties are associated with the microbiota of Dahi specifically to Lactic acid bacteria.The species of lactic acid bacteria, if isolate and characterize, can be used as probiotics as well as starter cultures for fermentation.The aim of the present project is to isolate, identify and characterize lactic bacteria from the artisanal fermented milk product Dahi. and use the characterized LAB as probiotics for modulation of dysbiotic gut microbiota and, as starter cultures for fermentation.
